I got 2 black bears back in spetember, got em both with my .303, got the one, butchered it up and then went out again and got the second one, 6 days apart.

Cool Bud,  Down here we cant hunt Bears, I had one come up in the back pasture at night, I went out to check on my goats and there it was, and all I had was the 1100 with 7 1/2 shot in it.... I went bach in and got the .30 carbine went back out and it was gone. I looked like John Balushie in Animal house going back to the house.... it was so funny now that I think back on it.......

Very fatty/greasy, not usually a problem with game meat (it is usually wayyyyyyy lean) the only thing is that bear fat tastes horrible....

I was wondering if anyone here liked bear meat.  I've heard people say it's too greasy and nasty, and others say it's great.  The ones who say it's great also say it depends on how you cook it.  They say as long as you broil it or BBQ it so the grease can drain off, it's really good.  Another said that if you cure and/or smoke the butt, it's just like ham.  And another said that bear makes great sausage.  Any of you have opinions on this?

Problem with bear is it tastes like what it eats fer starters.They are known to travel 30 kms to get to a dumpsite.But if you can get one that DOESN'T have access to a dump-then things are different.
When you process them-the fat will begin to render in your hands as you work it..makes things a little difficult.
If you roast it-have a large vessel under it to catch the fat-ther'll be LOTS of it.

Sounds like butchering a farm raised Sheep lots of fat , But oooh so good on the plate!
I had one that I raised a few years ago, Doctor Gremion that used to work at the clinic that my Wife works at, wanted to try his new Pistol out on a live critter so he Volunteird to butcher it for me.
When I got back from work Doc told me never again. It was so fat that they had to cut hole in the hide to get a gripe on it to pull it off the carcas.
But in the long run that was the best meat I have ever cooked in my house.
wish I knew some one around here that would butcher one , I would gladly get another for the freezer.
Bear on the other hand??????

bears that have been eating in grain fields all their lives taste really good, though they are the fattest ones, the ones i have been getting around here have mainly been eating berries and rose hips, things like that, i used to live up in northern B.C and hunted bears mainly on grain fields

It's a funny thing I always invisioned  that Bears being of the pig family they would taste like Pork ! Are Sows better eating than Boars ???

When I was working with the Arctic Eclogy unit it was standard practice to carry a rifle because of Polar bears. Now we had 1 lad who thought he knew better wouldn't carry a rifle as he disagreed with shooting even if it was just banging a round off to scare the buggers off. So he devised his own bear scare method. 1 minflare !!! Great idea until he put it into practice. Enter 1 large hungry bear stage left eyeing up a potential meal on legs. Out comes the miniflare he pops the flare and it sails off towards Yogi. Now instead of landing in front of said yogi and scaring him it landed behind and went off with a loud bang.  Lucky for dipstick the bear turned when the bang went off behind him and legged it in the opposite direction. That Academic idiot was the luckiest git alive on this planet if yogi had acted true to form and run away in a st line from the bang he'd have had the thick end of a 1000lb of  angry bear in his lap. Personally I wasn't bothered if it had eaten him I was more annoyed at the thought of having to fill in the stores inventory for replacing the Arctic gear he was wearing.

He was a Tree Hugger CM.  Total pain in the a@@.  1 of the other research groups saw what happened and told us all about it.  After that is was the rule to work in pairs and carrying a rifle was mandatory. No rifle no research, no research then goodbye you're not pulling your weight.  Nobody wanted to shoot 1 anyway because of the amount of paperwork involved. The odd ones that were shot were taken away by the authorities for post mortum examination and usually found to be either sick or so old they couldn't hunt properly. The meat is inedible ( Polar bear liver is toxic to humans.) and the pelts were destroyed.
