You guys have any opinions on which headspace gauge to go by?  Some say to use the "GO" gauge only, and others say to use the "FIELD" gauge.

Any thoughts?

Use the field gauge.  Rifle is designed to be generous, so will be safe to use on a "pass" from the field gauge.

I've always  Used the Field guage allowing for the generous size of a Enfield chamber  I also aneal my brass after about 10 loads & have found this has reduced shoulder cracking I also have found even in the Mk3 action by keeping my loads down to starting loads ,I'm only FL resizing every 5 or 6 shots !
